CLIMATES

Not bound by a single distillery, location or fermentation process.

We are obsessed with the post distillation process of blending and maturation, and how the aging environment is crucial in the development of quality spirit.

We seek out, blend, mature and bottle spirits of outstanding quality. Marrying traditional knowledge and cold climate maturation techniques with innovative technology and sustainable production processes to create products that captivate the imagination and deliver unique flavour profiles. – Every bottle tells a tale.

Our base blend – Guided by the mentorship of some of the best master blenders in the game, we have created a proprietary base blend that stands out from the crowd.

A blend of that classic funky Jamaican double retort and Dominican republican pot still molasses unaged rums, blended and reduced using our secret sauce; distilled Scottish sea water. Why Distilled Sea water you ask? Find out more… (link to research article)

Inspired by the Solera system technique commonly used in sherry and whisky production, we blend several years of the Dominican unaged rum to give us consistency between vintages.

With an award-winning sustainability and distillation engineer at the helm, sustainability is at the centre of everything we do.

As a start-up we don’t claim to be the carbon negative, commit to unachievable net zero targets and won’t bore you with green washing our story. We are human, we are not perfect but we try to consider our impact at every stage, not just on the environment but with the local community and the those throughout our supply chain too.

Sustainably smuggled ashore

We are committed to only working with distilleries, producers and distributors with strong ESG strategies and credentials, with reliable reporting and achievable sustainability targets.

We exclusively use distilled Scottish sea water from the East Neuk Salt Co. This innovative approach to the use of water generated in the salt manufacturing process affords us the highest quality (water quality doc link) demineralised water for our blending and reductions process while reducing the environmental impact of our water sourcing.

So good you can drink it, and we do!

We aim to minimise the environmental impact of our packaging wherever possible. We still have some way to go but have set ourselves a starting point.

We are proud of the fact that our cardboard packaging and labels are FSC approved. And our cork is made from agglomerate, moulded off cuts from the wine cork production process.
